- 4 slices Multigrain bread
- 2 Tbsps Hummus
- ½ small, ripe Avocado (peeled and chopped)
- 1 tsp lemon juice
- 1 pinch salt
- 2 ozs sun-dried tomatoes (drained and chopped)
- Arugula
- olive oil (for cooking)

Preparation steps
1.
Spread 2 slices of bread with hummus.

Roughly mash the avocado, lemon juice and salt in a bowl. Spoon over the hummus and top with tomatoes and rocket. Cover with the remaining bread.
3.
Lightly oil a frying pan over a low heat. Add the sandwiches and cook for 2-3 minutes on each side until golden and crisp. Cut in half and serve.
