1onions peeled and chopped
2 clovesgarlic peeled and minced
2 ½ cupswaxy potatoes peeled and diced
1 ⅓ cupsCanned Corn drained
1 bunchscallions cleaned and cut into rings
2 tablespoonsbutter
2 tablespoonsCorn starch
⅓ cupsdry white wine
2 cupsvegetable stock
1 cupmilk
salt
freshly ground Black pepper to taste
1 pinchNutmeg freshly grated

Directions

1 Melt the butter in a large saucepan; add the onions and saute until translucent. Add the garlic and 2/3 of the potatoes. Sprinkle in the cornstarch and stir to incorporate. Add the wine and vegetable stock and stir until lump free. Simmer for 15 minutes over medium heat, remove from heat source and mash the potatoes.
2 Add the corn, spring onions, remaining potatoes, and milk. Season to taste with salt, pepper and nutmeg. Return to heat and simmer for 10 minutes, or until potatoes are tender.
3 Adjust seasoning if necessary. Serve immediately.
