- 1 onion (peeled and chopped)
- 2 cloves garlic cloves (peeled and minced)
- 2 ½ cups waxy potatoes (peeled and diced)
- 1 ⅓ cups Canned Corn (drained)
- 1 bunch scallions (cleaned and cut into rings)
- 2 Tbsps butter
- 2 Tbsps Corn starch
- ⅓ cup dry white wine
- 2 cups vegetable stock
- 1 cup milk
- salt
- freshly ground Black pepper (to taste)
- 1 pinch Nutmeg (freshly grated)

Preparation steps

Melt the butter in a large saucepan; add the onions and saute until translucent. Add the garlic and 2/3 of the potatoes. Sprinkle in the cornstarch and stir to incorporate. Add the wine and vegetable stock and stir until lump free. Simmer for 15 minutes over medium heat, remove from heat source and mash the potatoes.

Add the corn, spring onions, remaining potatoes, and milk. Season to taste with salt, pepper and nutmeg. Return to heat and simmer for 10 minutes, or until potatoes are tender.

Adjust seasoning if necessary. Serve immediately.
