Vegetables with Sesame Seeds

- 200 grams Asparagus
- 200 grams potatoes (waxy)
- 2 carrots
- 200 grams Pumpkin
- 100 grams Snow peas
- 2 Tbsps Tahini
- 1 garlic clove
- lemon juice
- Light soy sauce
- cayenne pepper
- 1 Tbsp Sesame seeds
Preparation steps
Toast sesame seeds in a dry pan.
Peel asparagus and cook in boiling salted water for about 20 minutes. Remove, rinse in cold water and cut diagonally into 2 cm (apprxoimately 3/4 inch) pieces.
Peel carrots and pumpkin. Cut carrots into slices and chop the pumpkin. Blanch both in the asparagus water briefly and rinse in cold water. Drain.
Rinse snow peas and also blanch in the asparagus water. Peel the potatoes and cut into slices. Cook in the asparagus water about 10 minutes. Remove and drain.
Heat tahini in a saucepan with minced garlic and a little of the vegetable cooking water. Mix with the vegetables. Simmer 1-2 minutes, then season with soy sauce, cayenne pepper and lemon juice. Arrange on warmed plates and serve sprinkled with sesame seeds.
