Vegetable Pasta Salad
Cook the pasta in plenty of boiling salt water until al dente. Rinse in cold water and drain well.
Peel the carrots and cut into strips. Rinse and cut the scallions into rings. Rinse the zucchini and cut into strips. Quarter the peppers, rinse and cut into strips.
Heat 3 tablespoons of olive oil and saute the vegetables for 2-3 minutes. Add the vinegar and broth. Season with salt, pepper and sugar. Remove from the heat and mix the vegetables with the pasta. Stir in the remaining olive oil. Let sit for about 10 minutes.
Rinse the chives, shake dry and cut into rolls. Mix the chives into the salad, season to taste and serve.
