- 1 egg yolk
- 200 milliliters water
- salt
- 1 red chili pepper (finely chopped)
- 600 grams mixed Vegetables (such as broccoli, carrots, mushrooms, zucchini)
- vegetable oil (for frying)
- lemon juice

Preparation steps
1.
Mix 100 grams (approximately 1 cup) of flour with the egg, egg yolk, water, and chile pepper to form a smooth batter. Season with salt and let the batter rest briefly.

Preheat the fryer (or a pan with oil) to 180°C (approximately 350°F).
3.
Dust the vegetables in the remaining flour, dip in the batter and fry until golden brown. Drain on paper towels and sprinkle with lemon juice. Serve hot.
