Preparation steps

Peel, rinse and slice the potatoes. Rinse the cauliflower and drain. Rinse, trim and cut the leeks slightly oblique into 0.5 cm (approximately 1/4 inch) thick slices. Cut the bacon into strips. Peel the onion and dice.

Layer the potatoes, leeks and cauliflower in a buttered baking dish. Sauté the onion until translucent in hot butter. Then mix in a bowl with the cream, eggs, creme fraiche and mustard and mix in half of the cheese. Season with salt, nutmeg and pepper. Then pour over the vegetables so that it is barely covered. Sprinkle the dish with remaining cheese and bake until golden brown in a preheated oven (180°C) (approximately 350°F) for about 45-50 minutes. Meanwhile, cut bacon into strips, fried in a pan, place on the finished dish and serve.
