6 cupsleftover Mashed potatoes
2 cupsmilk
2 cupsPepper Jack Cheese
1 cupcream cheese cubed
6 cupsshredded Cheddar cheese divided
2 cupsSour cream
6scallions chopped
1 teaspoonsalt
2 teaspoonspeppers
½ cupsalmonds slivered


1 Preheat oven to 350 F. In a small medium sauté pan cook the bacon. Drain, saving 2 tablespoons of the drippings. Crumble bacon into small pieces.
2 Stir together the bacon drippings, mashed potatoes, milk, jack cheese, cubed cream cheese, 2 cups of cheddar cheeses, sour cream, green onions, salt, and pepper.
3 Spread into a greased 9×13 pan. Sprinkle bacon and remaining cheddar on the top. Bake uncovered at 350° for 45 minutes. Before serving top with slivered almonds for more texture and crunch.
