6 slices Bacon (lardons)
3 cups leftover Mashed potatoes
1 cup milk
1 cup Pepper Jack Cheese
½ cup cream cheese (cubed)
3 cups shredded Cheddar cheese (divided)
1 cup Sour cream
3 scallions (chopped)
½ tsp salt
1 tsp peppers
¼ cup almonds (slivered)

Preparation steps

Preheat oven to 350 F. In a small medium sauté pan cook the bacon. Drain, saving 2 tablespoons of the drippings. Crumble bacon into small pieces.

Stir together the bacon drippings, mashed potatoes, milk, jack cheese, cubed cream cheese, 2 cups of cheddar cheeses, sour cream, green onions, salt, and pepper.
3.
Spread into a greased 9×13 pan. Sprinkle bacon and remaining cheddar on the top. Bake uncovered at 350° for 45 minutes. Before serving top with slivered almonds for more texture and crunch.
