2 ¼ cups Soy yogurt

Preparation steps

1.
Using a vegetable peeler, cut four thin strips of cucumber lengthwise and thread them onto wooden picks (to be used for garnish).
2.
Roughly chop the cucumber; place the chopped cucumber in the blender along with the arugula and soy yogurt and pulse until smooth.
3.
Pour into glasses and garnish with the skewered cucumber. Serve.
