- 10 slices whole wheat cracker
- 300 grams mixed Fruit (such as Strawberries, currants, blackberries, apricots)
- For the custard
- 3 Tbsps honey
- ½ l milk
- Vanilla bean
- 5 tsps cornstarch
- 2 egg yolks
- 4 Tbsps Whipped cream

Preparation steps

For the custard: Heat the honey in a small saucepan. Mix the milk with the vanilla bean and the cornstarch thoroughly and pour into the honey. Whisk until the sauce boils. Remove the pan from the heat and remove the vanilla bean. Whisk the egg yolk with the cream and carefully fold into the hot sauce. Let custard cool, stirring occasionally.

Break the crackers into pieces and line the bottom of a glass bowl. Rinse the fruit and pat dry. Cut the apricots in half, remove the pits and cut into thin slices. Spread the fruit over the cracekrs and pour the vanilla sauce gently on top. Let soak in the refrigerator for about 3 hours.
