100 grams sugar
30 grams Pastry flour
1 pinch salt
For the fruit
Plum (120 grams or approximately 4 ounces)
Blackberry (120 grams or approximately 4 ounces)
2 Pear

Preparation steps

1.

Bring the milk to a boil. Slit the vanilla bean lengthwise, scrape the seeds out and stir into the milk along with the pod.

2.

Beat the egg yolks with the sugar in a bowl until creamy, then stir in the flour.

3.

Slowly stir the boiling milk into the egg yolk cream, then pour everything back into the pot. Remove the vanilla pod and simmer over low heat while stirring constantly. 

4.

Pour the custard through a sieve, let cool, and sprinkle the surface with sugar to prevent a skin from forming.

5.

Rinse the fruit and pat dry. Remove the pits from the plums. Peel the pears and remove the cores. Cut the fruit into smaller pieces.

6.

To serve, pour the cream into dessert glasses. Spoon the fruit over the cream and garnish with blackberries and mint leaves.
