150 grams Oyster mushrooms
1 garlic clove
1 tsp dried oregano
½ tsp fresh rosemary
4 bay leaves
1 Tbsp lemon juice
2 Tbsps olive oil
salt

8 Cherry tomatoes
4 shallots
4 Wooden skewers

Preparation steps

Cut the turkey into 4 cm (approximately 1 1/2 inch) cubes. Wipe the oyster mushrooms with a damp paper towel and cut into 4 cm (approximately 1 1/2 inch) pieces.

Peel and press the garlic into a bowl. Chop half the rosemary leaves and half the bay leaves. In a bowl, whisk the garlic with the oregano, chopped rosemary, bay leaves, lemon juice and olive oil until thoroughly combined.. Season with salt and pepper to taste.

Toss the turkey and mushrooms with the oil mixture. Cover and refrigerate for 1 hour.

Rinse the tomatoes. Peel and halve the shallots. Alternately thread the turkey, mushrooms, tomatoes, shallots and half the bay leaves on the skewers. Cook on the grill until the turkey is cooked through, about 4 minutes per side.
