1 scoop Mozzarella (about 125 grams)
1 shallot
1 tsp medium-hot Mustard
1 egg
400 grams Ground turkey
2 Tbsps White bread crumbs

2 Tbsps vegetable oil
2 Tomatoes
1 handful Arugula
4 White rolls
4 Tbsps Mayonnaise

Preparation steps

Drain mozzarella and cut into small cubes. Peel and finely chop shallot and mix with mustard, egg, and ground turkey in a bowl. Add enough breadcrumbs to help mixture hold together. Season with salt and pepper and form mixture into four burgers. Press a few mozzarella cubes into the center of each burger and reform burger until enclosed. Fry burgers in hot oil on both sides, 6-8 minutes.

Rinse, core and thinly slice tomatoes. Rinse, trim, and pat arugula dry. Tear into smaller pieces if necessary. Cut rolls in half horizontally. Place a few pieces of arugula on the bottom half of each roll. Top each sandwich with a burger and a tablespoon of mayonnaise. Cover with remaining arugula and tomato slices. Place roll halves on top and fasten with skewers. Wrap sandwiches in waxed paper and bring to school or work for lunch.
