Even smarter

Tuna provides the essential omega-3 fatty acids that protect the blood vessels and promote good concentration. The fish also contains haematopoietic iron and scores with muscle-building proteins.

Since the skewers are prepared with a lot of tuna, they should be enjoyed only rarely; because tuna is one of the fish species threatened with extinction. Alternatively, less tuna can be used and additionally some vegetables can be landed on the skewers.

2 garlic cloves
2 sprigs parsley
2 sprigs cilantro
160 milliliters olive oil
2 Tbsps ground cumin
salt
freshly ground peppers
1 Tbsp ground paprika
50 milliliters lemon juice
50 milliliters Orange juice
brown sugar

Preparation steps

Rinse the tuna, pat dry and cut into 2 cm (approximately 3/4 inch) cubes. Peel the garlic and finely chop. Rinse the herbs, shake dry, pluck the leaves and chop finely. Mix 4 tablespoons of oil with 1 tablespoon cumin and season with pepper and salt. Thread cubes of tuna on skewers and sprinkle with the cumin oil. Marinate 15 minutes.

Meanwhile, mix the remaining spices with the herbs and the garlic and add lemon juice, orange juice and remaining oil. Season with salt and brown sugar. Brown skewers in a hot grill pan on all sides for 2-3 minutes, remove, arrange on plates and serve drizzled with the herb sauce.
