Tuna and Green Bean Salad
Cook the frozen green beans according to the package instructions. Drain the tuna and break into large pieces with a fork. Rinse the tomatoes and cut into quarters. Peel and thinly slice the onions. Rinse the lettuce and tear into large pieces. Arrange the tuna, lettuce, green beans, tomatoes, onions and black olives on a large serving platter.
Whisk together the mustard and vinegar until smooth. Slowly drizzle in the olive oil while whisking vigorously. Season with salt and pepper. Finely chop the parsley and capers and stir into the dressing. Drizzle the dressing over the salad just before serving.
