- ¼ cup olive oil
- 2 unwaxed lemons (one juice, one sliced)
- 5 cloves garlic cloves (four chopped, one sliced)
- 2 Tbsps white wine vinegar (to taste)
- 4 trout (skinned, approx. 150 g each)
- 4 Tbsps Caper (in oil)
- 1 scallion (finely chopped)
- 2 sprigs thyme (leaves removed)
- 4 bay leaves

Preparation steps
1.
Mix together the olive oil, lemon juice, chopped garlic and the vinegar. Place the fish in the marinade, sprinkle with the capers, spring onion and thyme leaves and season with salt and ground black pepper.
2.
Place one bay leaf, one lemon slice and one slice of garlic on top of each fillet and marinate in the fridge overnight.
