- 20 grams Truffle
- 400 grams Langostino (fresh)
- 1 Tbsp scallions
- 1 Tbsp lemon juice
- 1 Tbsp grapeseed oil
- 2 Tbsps Crème fraiche
- salt
- freshly ground peppers

Preparation steps
1.
Peel and finely chop the shallot and truffle. Rinse the langoustine, pat dry, and chop.
2.
Mix the langoustine with the shallot, truffle, chive, lemon juice, and oil. Chill in the refrigerator to marinate for 20 minutes.
3.
Before serving, stir in the creme fraiche, and season to taste with salt and pepper. Serve on plates (using a serving ring possibly).
