- 1 Grapefruit (thoroughly peeled to remove all white pith, and finely sliced, reserving the juice)
- 2 Tbsps brown sugar
- 1 red chili pepper (deseeded if preferred and sliced into rings)
- ⅓ cup fresh ginger (finely sliced)
- 2 Tbsps soy sauce
- 3 Tbsps Lime juice
- 4 carrots (finely sliced with a mandolin)
- 1 large Red onion (finely sliced with a mandolin)
- 2 Mangoes (peeled and cut into 2 cm cubes)
- 1 medium, firm Papaya (peeled and finely sliced with a mandolin)
- 4 cups Prawn
- 4 Tbsps sesame oil (pale)
- 1 handful cilantro (leaves picked)

Preparation steps
1.
Put the grapefruit juice in a pan with approx. 100 ml water. Add the sugar and bring to the boil. Remove from the heat and add the chilli, ginger, soy sauce and lime juice. Season to taste with salt.

In a bowl, mix the carrot, onion, mango and papaya with the dressing.
3.
Fry the prawns in a frying pan in hot oil for 1-2 minutes. Season with a little salt and mix through the salad together with the coriander. Divide between bowls and serve immediately.
