- 4 sheets white gelatin
- 1 ⅓ cups Coconut milk
- ¼ cup sugar
- ground cinnamon
- 2 tsps Lime juice
- ⅔ cup cream
- 1 egg white
- ⅔ cup Shredded coconut
- 1 ⅓ cups Pineapple (sliced approx. 1 cm thick)
- 2 Tbsps butter
- 2 Tbsps sugar
- ¼ tsp Chili flakes
- 1 Tbsp coconut chip

Preparation steps

Soak the gelatine in cold water. In a saucepan, heat half of the coconut milk with the sugar, a pinch of cinnamon and the lime juice. Squeeze the excess moisture out of the gelatine and dissolve in the pan, then stir in the rest of the coconut milk. Beat over a bowl of iced water until cold.

Whip the cream until stiff and, separately, whisk the egg white until stiff. Just before the coconut mixture starts to set, fold in the cream, egg white and desiccated coconut. Divide between small bowls and chill in the refrigerator for 4 hours.

Use a cutter to cut small stars out of the pineapple slices. In a frying pan, melt the butter with the sugar and add the pineapple stars, chilli flakes and coconut chips. Cook until golden and caramelised, then arrange on top of the mousse and serve immediately.
