1 tsp ground ginger
2 Kiwi (sliced or chopped)
½ cup Shredded coconut

Preparation steps

1.
Cut the pineapple lengthwise into quarters and remove the core.
2.
Cut along the curved edges to loosen the flesh from the rind. Cut the flesh in the rind crosswise into dice, leaving the cut fruit in the rind shell.
3.
Arrange the kiwi fruit in the shells.
4.
Mix together the apple juice and ginger and spoon over the pineapple and kiwi fruit.
5.
Cover and chill for at least 2 hours. Sprinkle with coconut.
