- 2 large Mozzarella
- Basil
- 6 ripe Tomatoes
- 4 Tbsps olive oil
- lemons (juiced)
- salt
- freshly ground Black pepper

Preparation steps
1.
Drain the mozzarella in a fine sieve. Wash the basil leaves and tomatoes and pat dry on kitchen paper.
2.
With a sharp knife, cut away the tough stalks of the tomatoes and slice them thinly. Slice the mozzarella and arrange on a platter with the tomatoes then scatter the basil on top.
3.
Whisk together the oil and lemon juice, season with salt and pepper and drizzle over the salad.
