1 small onion (chopped)
4 medium Zucchini (roughly chopped)
4 firm Tomatoes (roughly chopped)

9 eggs
1 cup grated, strong Cheese (optional)

Preparation steps

1.
Heat half the oil in a large frying pan and cook the onion and courgette gently in a little olive oil for 10 minutes until softened and turning golden. Stir in the tomatoes and season to taste with salt and pepper.

Beat the eggs in a bowl, then stir in the cheese and vegetables.

Heat the grill.

Heat the remaining oil in a frying pan and pour in the egg mixture. Cook, moving the egg around until set.
5.
Place the pan under the grill until the top is golden.
6.
Sprinkle over a little crushed pepper and serve hot, warm or cold.
