- 3 cups chickpeas drained (and rinsed if canned)
- 1 onion (diced)
- 1 clove garlic cloves (minced)
- 1 Tbsp fresh parsley (finely chopped)
- 2 tsps ground Cumin
- 1 tsp ground cilantro
- 1 tsp salt
- olive oil (for frying)
- 4 vegan whole wheat wraps
- 8 leaves bibb Lettuce
- 1 Tomato (diced)
- ½ Red onion (sliced thin)
- ½ Cucumber (diced)
- fresh cilantro
- ½ cup Tzatziki

For the Falafel:

Place chickpeas in a food processor or blender. Pulse until they form a roughly chopped mixture. Add the onion, garlic, parsley, cumin, coriander and salt, and continue to pulse, scraping the sides occasionally, until the ingredients are well combined and the mixture holds together. Let rest for about 30 minutes.

Heat olive oil in a large frying pan over low heat. Form golf ball-size spoonfuls of the mixture and fry for 8-10 minutes, rotating occasionally so each are crisp and golden all around. Transfer to paper towels and let cool. Repeat the process with the remaining olive oil and falafel mixture.

To Assemble the wraps:

Fold one of the wraps in half. Place two of the lettuce leaves down in the middle. Sprinkle 1/4 of the tomatoes, onions and cucumbers. Add a few falafels and a bit of cilantro. Drizzle a little tzatziki over the falafel and vegetables and then fold both ends of the wrap in toward the center creating a cone. Repeat for the remaining wraps, serve and enjoy!
