125 grams Smoked bacon
2 Tbsps Canola oil
1 tsp marjoram

Preparation steps

1.

Separate eggs. Beat egg whites with 1 pinch of salt. Whisk until foamy. Combine yolks, flour and milk. Carefully fold in egg whites.

Rinse and slice mushrooms. Rinse leek and cut into strips. Rinse parsley, shake dry and mince leaves. Finely dice bacon.

Heat 1 teaspoon oil in a pan. Fry a quarter of the bacon and leeks over medium heat, season with marjoram. Add a quarter of the mushrooms and cook. Pour in a quarter of the batter and thicken for about 5-10 minutes over low heat.

4.

Add a little parsley and tear into pieces with 2 forks. Cook 1-2 minutes more and season with salt and pepper. Bake in an over preheated to 80°C (approximately 170°F) to keep warm. Repeat until all batter is cooked. Remove from oven and serve.
