1 garlic clove
20 grams sun-dried Tomatoes (in oil)
2 sprigs oregano
2 centiliters gin
1 Tbsp lemon juice
1 tsp sugar
1 egg white
salt
peppers (coarsely crushed)

Preparation steps

Blanch tomatoes, peel, quarter and core. Puree tomatoes in the blender together with peeled garlic, sun-dried tomatoes (with 1 tablespoon tomato oil), oregano, gin, lemon juice and sugar. Beat egg white until stiff and fold into tomato puree. Season well with salt and pepper and place in a shallow metal tray. Place tomato puree in the freezer at least 4 hours. Stir tomato puree often with a fork.

To serve, remove tomato puree from the freezer and let rest at least 10 minutes, stir well again and spoon out ball shaped servings. Arrange tomato sorbet in bowls and serve if desired with toast.
