3 sprigs thyme

4 eggs
4 slices Cheese (such as Gouda)

Preparation steps

Clean the mushrooms and remove the stems. Rinse the tomato, cut out the stalk and cut off the sides. Cut the tomato into 4 large slices. Pour the oil in a hot pan, press in the garlic and add the thyme. Place the mushrooms and the tomato slices in the pan and let brown slightly for 2-3 minutes. Turn and finish cooking for 2-3 minutes. Season with salt and pepper, remove from the pan and place each tomato slice on a mushroom. Place together on a baking sheet lined with parchment paper.

Preheat the oven to broil.

Boil about 1 liter (approximately 4 1/4 cups) of water and the vinegar, then remove from heat. Individually break the eggs into a cup and let gently slide into the vinegar water. Return to heat and poach for 4-5 minutes (water should not boil). Remove from the water with a skimmer and put on the drained vegetables. Top with one slice of cheese and melt under the broiler.

Place the towers on plates and serve garnished with chives.
