- 4 hardboiled eggs
- 2 medium Tomatoes
- Mayonnaise
- Lettuce
- Cress

Preparation steps
1.
Rinse lettuce, spin dry and cut into strips. Spread lettuce on 4 small plates.
2.
Peel eggs and place on lettuce. Rinse and halve tomatoes and remove seeds with a small spoon. Place tomato halves on eggs to resemble mushrooms. Place mayonnaise in a pastry bag and pipe small dots onto the tomatoes to decorate.
3.
For smaller mushrooms, use quail eggs and cherry tomatoes.
4.
Garnish mushrooms with garden cress to serve.
