For the tagliatelle
400 grams Tagliatelle
For the sauce
3 garlic cloves
1 tsp hot ground paprika
4 Tbsps olive oil
200 grams Sour cream
250 milliliters milk
1 Tbsp sauce thickener
For garnish and seasoning
4 Tbsps coarsely chopped parsley
60 grams finely grated Parmesan

Preparation steps

For the tagliatelle: Cook the tagliatelle in a pot of boiling salted water until al dente.

For the sauce: Peel the garlic cloves and place in a small, high rimmed pot. Add the paprika and oil, and cook until soft. Puree with a hand blender. Stir in the sour cream and milk, and bring to a simmer. Stir in the cornstarch and cook until thickened. Season with salt, pepper and paprika to taste.

For serving: Drain the tagliatelle and toss with the sauce. Divide between warm bowls. Serve garnished with parsley and Parmesan.
