Preparation steps

Peel and wash the sweet potato and cut it into 1⁄4" thick slices. Put slices on a baking tray covered with baking paper, brush with oil and bake in a preheated oven at 390°F for 8-10 minutes.

Meanwhile, wash the mint, shake dry, pluck off the leaves and chop half finely. Finely chop the pistachios. Mix the goat cheese with the chopped mint and half of the pistachios and season with salt and pepper.

Remove sweet potato slices from the oven and let them cool down for 5 minutes. Pour the cheese mixture into a piping bag with a large spout, squirt small blobs onto the slices and sprinkle with mint leaves, remaining pistachios and pomegranate seeds.
