- 36 ozs Sweet potato
- 4 garlic cloves
- 3 chili peppers
- 7 ozs sheep cheese
- 2 Tbsps olive oil
- 1 Tbsp honey
- 2 Tbsps Pumpkin seed
- 2 Tbsps Sunflower seed
- 1 Tbsp Sesame seeds
- coarse Sea salt
Preparation steps
Peel sweet potatoes, wash and cut into finger-thick sticks. Peel garlic cloves and cut into slices.
Halve chili peppers lengthwise, remove seeds, wash and chop or cut into rings. Cut feta cheese into cubes and mix with sweet potatoes, garlic, chili, olive oil, and honey. Spread on a baking tray lined with baking paper and cook in a preheated oven at 180 °C / 350 ˚F for about 20-25 minutes.
Meanwhile, toast pumpkin and sunflower seeds and sesame seeds in a pan without fat over medium heat. Remove sweet potatoes from oven, arrange on plates and sprinkle with sea salt, seeds and sesame seeds.
