For the dough
cup Prune (pitted, chopped)
¼ cup Apple juice
1 egg
0.333 cup sugar
cup vegetable oil
1 cup natural Yogurt
1 ⅔ cups all-purpose flour
2 tsps Baking powder
½ tsp baking soda
1 pinch salt
2 Tbsps cocoa powder
To decorate
¾ cup dark chocolate frosting (ready made)
1 ¾ ozs Milk chocolate (approximately 50% cocoa)

Preparation steps

Heat the oven to 180°C (160° fan) 350F gas 4.

Place 12 paper baking cups in the muffin pan. Knead the prunes in the apple juice by hand until the prunes have absorbed the juice.

Beat the egg with the sugar, oil and yogurt. In another bowl, mix the flour with the baking powder, baking soda, salt and cocoa powder. Mix the egg mixture into the flour and beat quickly until all the dry ingredients are moist.

Spoon half the dough into the paper cups. Spoon over a little prune mixture and top with the remaining dough.
5.
Bake on the middle shelf for 20-25 minutes. Test with a wooden toothpick: if it comes out clean the muffins are done. Cool on a wire rack.
6.
To decorate: prepare the chocolate topping as instructed on the packet. Pour over the muffins. Scrape the milk chocolate with a potato peeler or the back of a knife to make scrolls or shavings and sprinkle them over the topping before it dries.
