2 Tbsps olive oil
50 grams chopped Walnut
2 Tbsps ground almonds
2 Tbsps honey
1 generous pinch Vanilla bean
1 Tbsp lemon juice
For the garnish

Preparation steps

For the peaches: Preheat the oven to grill with the rack (including baking sheet or roasting pan).

Rinse and halve peaches and remove pits. Brush with olive oil and place cut side down on the hot rack. Broil about 5 minutes. Meanwhile, combine walnuts with almonds, honey, vanilla and lemon juice. Turn over peaches and fill them with nut mixture. Broil an additional 10 minutes.

Serve garnished with crumbled meringue and mint.
