7 sheets gelatin
75 grams sugar
4 egg yolks
500 milliliters Whipped cream

Preparation steps

1.

Rinse strawberries, core, and depending on the size, cut into pieces and place in a mixing bowl. With a hand blender, purée (or blender purée), on high. Soften the gelatin in cold water. Beat the sugar with the egg yolks until creamy in a double boiler. Remove from heat and stir dissolved the gelatin into the mixture. Set bowl in ice water until cold. Remove and whip the mixture until stiff. Mix the strawberry purée into the egg yolk cream and stir. Place mixture into cups or ramekins and chill at least three hours.

To serve, run under hot water to loosen and place on a plate
