500 grams Gooseberry
100 grams sugar
juice of half Limes
4 centiliters Grand Marnier
peppers (freshly ground)
mint (for garnishing)
Vanilla Sauce
250 milliliters milk
250 milliliters Whipped cream
1 Vanilla bean
5 egg yolks
60 grams sugar

Preparation steps

1.

Combine cream and milk with halved vanilla bean, bring to a boil. Take off heat.

2.

Beat yolks with sugar until creamy. slowly add warm cream and milk, stirring. Simmer on low heat, stirring occasionally. Do not boil.

Place custard in a sauce dish, remove vanilla bean, sprinkle with sugar to prevent skin from forming. Cool.

4.

Rinse and dry strawberries, hull and cut into pieces. Rinse, and dry gooseberries. If necessary, blanch with hot water. Combine strawberries and gooseberries with sugar, lime juice and Grand Marnier. Season with pepper and let rest for approximately 15 minutes. Drizzle with vanilla sauce and serve garnished with mint.
