4 duck legs (about 150 grams each)

Preparation steps

For the sauce, rinse the strawberries, pat dry and chop coarsely. Peel and coarsely chop the garlic and purée with the strawberries, the honey and the lemon. Stir in the thyme and cayenne pepper.

Rinse the duck breasts, pat dry and place with the strawberry sauce in a freezer bag. Close the bag and leave to marinate in the refrigerator for about 5 hours.

Preheat the oven to 100°C (approximately 200ºF).

Remove the duck breasts from the marinade and pat dry. Sear in a pan with the skin side down for 3-4 minutes until golden brown. Turn briefly and then slide onto a rack in the oven. Slide a drip pan (or cookie sheet) underneath and cook for about 30 minutes until pink.

Wipe the pan with paper towels and dust with the powdered sugar. Allow to caramelize until light brown and then add the puréed strawberry sauce. Stir well and simmer for several minutes to thicken up. Then, add the remaining strawberries. Season with salt and cayenne pepper.

Serve the duck breasts drizzled with strawberry sauce and with mashed potatoes if desired.
