1 kilogram ripe Strawberries (rinsed and stems removed)
500 grams jam sugar 2:1 (or 350 grams jam sugar 3:1)
2 lemons (juiced)

Preparation steps

1.

Mix the prepared strawberries together with jam sugar in a pot. Let macerate for about 2 hours then puree strawberries briefly with an immersion blender. Add lemon juice and let sit for about 5 minutes. Bring to a boil, skimming off any resulting foam.

Pour the jam into hot, clean jars. Fill to the brim.

Place the tops on the jars and invert the jars. Allow to cool for about 15 minutes. Then turn the jars over and continue to cool.

4.

A vanilla bean pod may also be scraped into the jam, if desired.

5.

Fresh cracked pepper also adds a nice flavor to strawberry jam.
