Preparation steps

Rinse the strawberries and drain thoroughly. Trim, then cut into pieces. Weigh the fruit, add to a pot, and mix in the same amount of sugar. Add the lemon juice and mix well. Cover and let infuse for 2 hours.

Bring the mixture to a boil, stirring constantly. Cook for 4 minutes, until the jam begins to thicken. Skim any foam that rises to the surface. Fill the prepared jars to the brim with the jam. Seal tightly, and cool completely.
