Preparation steps

1.

Rinse the strawberries, pat dry and cut a few into slices. Sprinkle the strawberries with 1 tablespoon of powdered sugar and lemon juice.

Puree the remaining strawberries. Beat the egg yolks with the remaining powdered sugar until foamy. Stir in the quark and sour cream.

3.

Beat the heavy cream until stiff and fold everything together. Spread the cream into bowls and decorate with strawberry slices and lemon balm. Serve cold.
