3 sheets gelatin
40 grams sugar
2 egg yolks
250 milliliters Whipped cream

Preparation steps

Rinse strawberries, cut into smaller pieces and puree with an immersion blender. Soften gelatine in cold water. Combine sugar with egg yolks and whisk until white and creamy over hot water bath. Remove from heat and dissolve squeezed gelatine into it. Place into an ice bath and cool, stirring. Beat heavy cream until stiff. Add strawberry puree into egg yolk cream. Fold in whipped cream and place cream into four small bowls. Refrigerate for at least 3 hours.

Garnish with petals and serve.
