- 1 cup Soy milk
- 1 tsp Cider vinegar
- ⅓ cup sunflower oil
- ¾ cup sugar (or xylitol)
- 1 tsp Almond extract
- 1 ¼ cups all-purpose flour
- 2 Tbsps Corn starch
- ¾ tsp Baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 ½ ozs Plum (mixed, chopped)
- 1 ½ ozs Apricot (mixed, chopped)
- 3 Tbsps sliced almonds

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease 6 muffin tins.
2.
Whisk together the soya milk and vinegar and set aside for a few minutes until curdled.
3.
Beat together the soya milk mixture, oil, sugar and almond extract, in a mixing bowl.
4.
Sift in the flour, cornflour, baking powder, bicarbonate of soda, and salt and mix until just combined.
5.
Spoon into the tins and top with the plums, apricots and almonds.
6.
Bake for about 20 minutes, until golden. Cool in the tins for 5 minutes, then place on a wire rack to cool completely.
