This vegetarian dish takes less than a half hour to put together and is a good source of vegetable protein from the tofu and minerals and vitamins thanks to the chard.
This dish also tastes delicious with poultry like chicken or turkey instead of the tofu.

- 18 ozs Chard leaf (Swiss, ruby & rainbow)
- 2 cloves garlic cloves (crushed)
- 1 Red onion (finely sliced)
- 1 Orange (juice and finely grated zest)
- 2 Tbsps Oil
- salt
- peppers
- 14 ozs firm Tofu (cubed)
- 3 Tbsps Corn starch
- Oil (for deep frying)
- To garnish
- scallions (curls)
Preparation steps
1.
Separate the chard leaves and stalks. Tear the leaves and slice the stalks.

Heat the oil in a large skillet (frying pan) or wok. Add the onions and chard stalks and stir fry for 3-4 minutes until starting to soften.

Add the garlic, chard leaves and orange zest, season well and stir fry for a further 2-3 minutes until the leaves have wilted. Stir in the orange juice.

Heat the oil in a large deep pan

Toss the tofu cubes in the cornstarch.
6.
Cook the tofu in batches in the hot oil for 3-4 minutes, until golden and crisp.
7.
Put the chard mixture into warm serving bowls and divide the tofu cubes between the bowls. Garnish with scallion curls.
