600 grams Tofu
4 Tbsps soy sauce
100 milliliters Rice wine
1 Lime (juiced)
1 tsp brown sugar
1 red Bell pepper
1 red chili pepper
4 scallions
40 grams Cashews
2 garlic cloves
3 centimeters ginger
2 Tbsps Peanut oil
1 tsp Szechuan pepper

Preparation steps

Cut the tofu into cubes. Mix the soy sauce with the rice wine, lime juice, and sugar. Mix with the tofu, and let marinate for 30 minutes.

Rinse the pepper and the chili. Remove the seeds and membranes, and finely dice both. Rinse, trim, and slice the scallions on a bias into 2-3 cm (approximately 3/4-1 inch) long pieces. Coarsely chop the cashews. Peel and finely dice the garlic and the ginger.

Remove the tofu from the marinade and drain well. Heat the oil in a wok, and stir fry the tofu until golden brown. Push the tofu to the edges of the wok, add the ginger and garlic, and stir fry briefly. Add the chili, peppers, and scallions, and stir fry for 2 minutes. Deglaze with the marinade, toss everything to combine, and season to taste with szechuan pepper.

Serve this dish with rice, if you'd like.
