Ingredients

For the pork
500 grams Pork tenderloin (ready to cook, trimmed)
½ Napa cabbage
3 carrots
2 centimeters ginger
1 garlic clove
1 tsp cornstarch
1 tsp sugar
4 centiliters sherry
2 Tbsps light soy sauce
2 Tbsps Peanut oil
1 Tbsp sesame oil
1 Tbsp Lime juice
For the garnish
Coriander

Preparation steps

For the pork, rinse pork, pat dry and cut into thin slices. Rinse cabbage, trim and cut into fine strips. Peel carrot and cut into thin strips. Peel ginger and garlic and finely chop. Mix cornstarch in a bowl with sugar, sherry and soy sauce.

Heat peanut oil in wok and fry pork with ginger and garlic for 1-2 minutes while stirring occasionally. Slide pork to the edge of the wok and place carrots in the middle of the wok. Fry for about 1 minute, mix with pork and push mixture back to the edge. Place cabbage in the center, saute briefly, mix with remaining ingredients and fry for 1-2 minutes. Add soy sauce mixture and sesame oil, mix and bring to a boil and season with lime juice.

Transfer stir fried pork to plates or bowls and serve garnished with cilantro and lime.
