4 Tbsps sesame oil
4 Tbsps dark soy sauce
2 sprigs Lemongrass
20 grams ginger
1 red chili pepper
4 scallions

2 Tbsps Rice vinegar
40 grams Shelled peanut

Preparation steps

Rinse the chicken breats, pat dry and cut into strips. Toss the chicken breast strips with 2 tablespoons sesame oil and the soy sauce. Rinse the lemongrass, cut into halves, and press, and add to the chicken breast strips. Marinate for about 30 minutes.

Peel the ginger and finely chop. Cut the red chile pepper (with gloves) into rings. Rinse, trim and cut the scallions diagonally into 4 cm (approximately 1½ inch) long pieces.

Heat the remaining sesame oil in a wok and fry the ginger, chile pepper and scallions in it for 1-2 minutes. Remove the vegetables from wok and set aside. Add the marinated chicken breast strips into the same wok and saute for about 3 minutes on all sides. Add the fried vegetables to the chicken breast strips, season with salt and pepper and pour in the rice vinegar. Chop the peanuts and sprinkle over the chicken breast strips.

Serve the chicken and veggies on a plate as per choice with rice and broccoli.
