Stew with Vegetables, Sausages and Smoked Pork

- 300 grams potatoes
- 2 carrots
- 200 grams Cauliflower
- 200 grams green Beans
- 150 grams Peas
- 1 stalk Leeks
- 200 grams Brussels sprouts
- 1 onion
- 2 Tbsps sunflower oil
- 4 slices Smoked pork chop (gently seared)
- 4 Hot dogs
- 1 ½ liters warm water
- 2 Tbsps parsley (finely chopped)
- 2 parsley
- salt
- freshly ground peppers
- 1 generous pinch Chili powder
- freshly grated Nutmeg
Preparation steps
Rinse, peel and dice potatoes. Rinse and peel carrots, cut into small cubes. Rinse beans, trim ends and halve if necessary. Rinse Brussels sprouts and cut stalks crosswise. Rinse and dry leek, cut white and green parts into fine rings.
Peel onion and chop finely. Heat oil in a saucepan and saute onion until soft. Add potatoes and carrots and saute briefly. Add water, season with salt and simmer, covered, for about 8 minutes. Add cauliflower, Brussels sprouts, parsley stems and beans and simmer on low heat for another 10 minutes. Add peas and leek and simmer for another 5 minutes. When all vegetables are cooked, remove parsley stems and add smoked pork nad sausages. Simmer for 4-5 minutes. Season with salt, chili powder, nutmeg and pepper. Add chopped parsley and serve hot.
