8 ozs Beef fillet (in one piece)
¼ cup Nut oil
2 Avocados (stoned and skinned)
1 Lime (juiced)
1 tsp Tabasco sauce
2 cloves garlic cloves (minced)
1 Baguette (halved horizontally)
1 large Beefsteak tomato (sliced finely)
1 Red onion (sliced into rings)

Preparation steps

1.
Preheat the oven to 200°C (180 fan) | 400°F | gas 6 and heat a heavy-based frying pan over a hot heat until smoking.
2.
Rub the beef fillet with the oil and season well. Pan fry the beef fillet for 2 minutes, then flip and transfer to the oven to finish cooking for 8 minutes or until medium rare.

Meanwhile, prepare the guacamole by mashing together the avocado, lime juice, Tbasco and garlic with salt and pepper.
4.
Remove the beef and allow to rest for 5 minutes in a warm place before slicing thinly.
5.
Spread the bottom half of the baguette with the guacamole. Top with the slices of tomato, then beef.
6.
Place the onion rings on top and rearrange the top half of the baguette on top. Serve immediately.
