- 500 grams Beef fillet (tenderloin)
- salt
- freshly ground peppers
- 20 grams clarified butter
- 3 onions
- 1 red Bell pepper
- 1 yellow Bell pepper
- 2 Tbsps olive oil
- 1 Baguette (halved lengthwise)
Preparation steps

Rinse the meat, pat dry, and season with salt and pepper. Heat the clarified butter in a grill pan, and sear the beef on both sides. Reduce the heat, and cook until pink in the middle.

Peel and julienne the onions. Rinse and halve the peppers. Remove the seeds and cut into bite-sized pieces.

In a separate grill pan, heat the oil. Toast the baguette halves cut side down until golden brown. Remove from the pan and set aside.
4.
Add the onions and peppers to the pan, and sauté until golden brown, stirring occasionally. Season with salt and pepper. Remove the meat from the pan, rest briefly, then cut into slices.
5.
Arrange the vegetables on the baguettes, then top with the beef. Serve with ketchup, or tomato sauce if you'd like.
