14 ozs Celery
2 Tbsps olive oil
1 Tbsp Caper (+ 1 Tbsp of caper juice)
peppers
8 ozs Halloumi cheese
salt
4 ozs salad (e.g. Romaine lettuce, radicchio, lollo rosso, frisee, arugula)
3 ozs Pomegranate seed

Preparation steps

1.

Clean, wash, and cut the celery into pieces. Heat 1 tablespoon of oil in a frying pan. Fry the celery pieces in oil at medium-high heat for 2-3 minutes on each side. Add capers and 1 tbsp. of the liquid from the caper jar, season with pepper, and set aside.

2.

Heat the remaining oil in a grill pan. Cut Halloumi into slices and season with salt and pepper. Fry over medium heat for 1-2 minutes on each side until golden brown.

3.

Wash the salad, spin dry and mix with celery and pomegranate seeds and season to taste with salt and pepper. Arrange Spring salad with halloumi on top.
