8 ozs Halloumi cheese
1 Tbsp olive oil
1 tsp Curry powder
1 Tbsp Lime juice
1 small Zucchini
¼ Mango
2 slices Sourdough (bread)
peppers
1 tsp Maple syrup
1 Tbsp White vinegar

Preparation steps

1.

Cut Halloumi cheese into slices of about 1/2-inch width. Mix oil, curry powder and lime juice. Marinate Halloumi in mixture for about 10 minutes.

In the meantime, clean, wash and slice the zucchini. Add zucchini slices to the Halloumi. Peel the mango, remove the flesh from the core and cut into slices.

3.

Grill the Halloumi and zucchini in a hot grill pan over medium to high heat for 3-4 minutes on each side. Remove and spread on the slices of bread.

Put the mango slices in the grill pan and grill on both sides for 2-3 minutes over high heat. Season with pepper and reduce heat. Add maple syrup and let it caramelize briefly. Deglaze with vinegar and let it simmer for 1-2 minutes.

5.

Put mango slices on the Halloumi and serve.
