- 2 slices Pumpernickel bread
- 2 tsps honey
- 75 grams lean Bacon
- 2 shallots
- 2 Tbsps White vinegar
- 3 Loquats
- 200 grams fine Spinach
- 4 Tomatoes

Preparation steps

Crumble Pumpernickel finely, saute in a pan, remove and drizzle with honey.

Slice bacon into thin strips. Finely chop shallots. Fry bacon until crisp in a pan, then remove. Saute shallots in bacon fat. Deglaze pan with vinegar and pour into a cup. Season with salt and pepper. Rinse and chop loquat. Rinse spinach and pat dry. Slice tomatoes. Distribute salad ingredients on four plates. Drizzle with vinegar dressing and garnish with pumpernickel croutons.
