300 grams Pastry flour
1 pinch salt
4 Tbsps vegetable oil
150 milliliters lukewarm water
800 grams potatoes
800 grams Spinach
3 egg yolks
1 onion
1 garlic clove
salt
freshly ground peppers
Nutmeg
For serving
6 Tbsps breadcrumbs
4 Tbsps melted butter

Preparation steps

1.

For the dough: Place flour in a bowl, and salt, oil and water and knead into a tough, non-sticky dough. Cover and chill for 30 minutes.

Peel and dice potatoes. Cook in boiling salted water, then remove from heat and drain.

Rinse spinach and cook in boiling salted water, then drain and rinse in ice water. Squeeze spinach and coarsely chop. Peel and dice onions and garlic. Combine onions, garlic, egg yolks and diced potatoes. Season with salt and pepper.

4.

Press dough into a greased baking dish. Brush with melted butter and sprinkle with breadcrumbs. Top with spinach mixture and roll up. Brush with butter again and sprinkle with breadcrumbs. Bake in an oven preheated to 180°C (approximately 350°F) for 30-35 minutes. Remove, slice and serve.
